Got Pumpkin? Pumpkin Spice Bread!!

Here's one of my absolute FAVORITE recipes of all time. If you, like me are guilty of going Thanksgiving dinner shopping and scarfing up as many cans of pumpkin as will fit in the cart, with that fear that they might possibly run out and you will be  left pie-less (gasp) then you are probably sitting on some extra canned pumpkin with really no plan. Well here's a tasty solution: Pumpkin Spice Bread. This recipe yeilds one loaf from which I get about six generous servings. (Who the heck can salvage 12 out of a loaf this good??)

Ingredients:
1 cup brown sugar (I find this too sweet personally and use about 1/3 cup)
2 large egg whites
1 cup pumpkin (If you use a 16 oz can you will end up with extra to use in oatmeal or another loaf!)
1/3 cup oil (or applesauce)
1/4 cup applesauce
1 teaspoon vanilla extract
1 cup white flour
3/4 cup whole wheat flour
1-1/2 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon baking soda

Directions:
1.) Preheat oven to 350 degrees Fahrenheit and grease an 8x4x2 inch loaf pan.
2.) Whisk sugar and eggs together. Add pumpkin, oil, applesauce, and vanilla, mixing well after each addition.
3.)Combine dry ingredients (flours, leaveners and spices) in a separate bowl. Stir into wet mixture.
4.) Pour batter into pan and bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.

Possible additions: walnuts, raisins, swap pumpkin for banana and make banana bread, drizzle with honey and berries, serve with icecream, etc.
